Cranberry Pistachio Cheesecake Ball
The holidays are quickly approaching, which means so are the holiday parties. To wow your guests and contribute a macro-friendly, super easy dish, this Cranberry Pistachio Cheesecake Ball is the way to go. It is a play off of the savory cheese ball, but even more, fun because it tastes like cheesecake!
Serve this with fruit and graham crackers, and your guests will have no idea that they're eating something that's good for them.
* Note: This recipe makes a somewhat small ball, so you may want to consider doubling the recipe if you're bringing it to a party.

Serving Size: 1/12 of recipe (or about 2 tablespoons)

8 ounces (1 block) Greek Yogurt Cream Cheese *
1 scoop of PEScience Gourmet Vanilla protein powder
1/2 teaspoon pure vanilla extract
2 tablespoons granulated stevia or Splenda (or about 5 packets)
40 grams reduced sugar Raisins
20 grams chopped pistachios
Place cream cheese, protein powder, vanilla, and stevia in a bowl.
Using a hand mixer, blend until thoroughly incorporated and smooth.
Spray your hands with cooking spray, and form a ball using the mixture.
On a plate, combine Craisins and pistachios, and roll cheesecake ball around in it to coat the outside.
Serve with fruit or graham crackers, and enjoy!
* Note: If you can't find cream cheese made with Greek yogurt, reduced fat cream cheese should work fine.
