No-Bake Christmas Sugar Cookie Bars

1/2 cup marshmallow fluff
4 ounces Greek yogurt cream cheese (could also use reduced fat cream cheese)
1/2 tablespoon coconut oil
40 grams of PEScience Gourmet Vanilla protein powder
1/4 cup coconut flour
3/4 cups graham cracker crumbs
1/4 cup stevia or Splenda (granulated - not the packets) *
1 teaspoon vanilla
1/2 teaspoon butter extract (optional)
1 tablespoon Christmas colored sprinkles
In a bowl, add all ingredients up until salt.
Microwave for 30 seconds, and mix together with a large spoon and your hands. This world best if you start with a spoon to incorporate most of it, and then finish combining using your hands. Tip: if the dough becomes hard to mix, try microwaving again for 10 seconds, then continue kneading.
Once you've formed a dough, add your sprinkles and mix in evenly using your hands.
Spray an 8x4 inch rectangular pan with cooking spray, and press your dough in an even layer on the bottom. When doubling the recipe, use an 8x8 inch pan.
Cut into 8 even squares, refrigerate, and enjoy!
