Ingredients

  • 400 grams cauliflower rice*

  • 2 teaspoons minced garlic

  • 1/4 teaspoon salt

  • 250 grams broccoli florets

  • 1 pound cooked chicken breast, diced

  • 4 Laughing Cow light Swiss wedges

  • 2 ounces grated reduced fat cheddar cheese

* To make the rice, you’ll need one large head of cauliflower. Riced cauliflower or cauliflower crumbles can typically be found in either the frozen section or produce section of your grocery store.

Instructions

  1. Preheat your oven to 350 degrees.

  2. Bake your chicken in the oven with a sprinkling of salt if you don’t have any that have been pre-cooked. Most thick breasts require about 30 minutes. Dice when cooled.

  3. Preheat a large skillet to medium.

  4. Spray your pan with cooking spray, and add broccoli to the pan with1 teaspoon garlic. Cook for 5 minutes until lightly browned and softened.

  5. Add your cauliflower rice to the pan with the remaining garlic. Cook for 5 more minutes until softened. Season with salt.*

  6. Turn off your pan, and add your Laughing Cow cheese. Stir to combine.

  7. Add chicken to the “rice” mixture, and stir to combine.

  8. Add mixture to a baking dish, and top with grated cheese.

  9. Bake for 15 minutes, and serve! Enjoy your cheesy chicken and rice bake!

* Note: If you can’t get riced cauliflower, create your "caulirice" by grating fresh cauliflower, or by pulsing florets in a food processor. I prefer the grating method because the food processor can make the pieces too small, but the food processor method is a little faster.
